In 1939 a young woman named Katy Griggs took a chance and opened a tiny Mexican food restaurant in the small village of Mesilla, New Mexico. The restaurant had a dirt floor, four tables and no running water, and Katy's own mom was the cook. On her first day opened it was so popular that she ran out of food.
