There are many different versions of kimchi out there and after experimenting a few times, I came up with this version that I like very much. This version is vegan/vegetarian and also onion and garlic-free but feel free to add these in to suit your taste. I have also substituted Korean red pepper flakes (Gochugaru) for my usual chili powder. The taste was quite close but Gochugaru do add an extra depth of flavour. So, if you can find it, I do recommend you use it.
