Great dish for brunch. This recipe calls for caramelized onion, spinach and mushrooms which can be interchanged to whatever veggies are in season (2 cups of cooked veggies). The heirloom tomato side salad is super simple and the colors are absolutely gorgeous! The acidic tomatoes cut the richness of the cheesy, eggy strata.
