A traditional fish dish of the Caribbean Islands, this succulent, subtle and refreshing meal made with onions, peppers and tomatoes lifts the soul. Ingredients (for 4-5 people) (for ackee & Saltfish and Plantain):
Salted Cod (1 packet, boiled at least twice so the salt is boiled out)*, a large tin of ackee, half a medium onion, 2 cloves garlic, touch of scotch bonnet pepper, small bunch thyme (chopped), curry powder (half tsp), fish seasoning (half tsp), season-all (half tsp), tandoori powder (quarter tsp), 2 x tomatoes (sliced) , Red and green peppers (roughly quarter each), 2 x ripened plantain, cooking oil
Ingredients (Festival Dumpling)
Self raising flour (approx 500g), sugar, salt, water
*The Salted Cod can be bought from most major supermarkets in the world food/Caribbean/Ethnic section for £2. Take the fish out of the packet and boil at least twice until it becomes flaky. For best results leave the salted fish in water over night then boil in water the next day twice.
