Xolo Kitchen is the creation of Mimi LOUREIRO. Mimi owned a successful vegan restaurant for 7 years in Cambridge MA called VO2 Vegan Cafe. She now consults with restaurants and home cooks to help empower, inspire, demystify, and encourage more plant-based options. She is incredibly passionate about making change for the better, one plate at a time. She creates recipes that are accesible, and fun to make with mostly simple ingredients found in the local supermarket or restaurant food supplier. She also has experimented with most of the plant-based options out there and can tell you what works for specific needs, ie. which vegan cheese is good on pizza?? Mimi is also the owner of O2 Yoga studios, holds a degree in Nutrition, and is the Vice President of NicaLove, an animal rescue operation in Nicaragua. She loves to travel, spend time with here family and hang out with animals like her 2 dogs, Ender the Pig, and other various creatures.
