Celiac disease is an autoimmune disease in which the gluten protein found in wheat, rye, and barley attacks the villi in the small intestine. When any amount of gluten is consumed, the villi are severely damaged and the autoimmune response is triggered. Symptoms vary wildly from person to person with celiac disease.
