Here are my official fish rankings:
Good
Bluefin Tuna – rich, buttery, and rly good in sushi and sashimi.
Chilean Sea Bass – tender with a buttery texture.
Salmon (King/Chinook) – high fat content, rich, and flavorful.
Halibut – mild, sweet, and firm, great for various preparations.
Black Cod (Sablefish) – melts in your mouth.
Arctic Char – similar to salmon but milder and less oily.

Mediocre
Cod (Atlantic/Pacific) – mild, kinda flaky, whether its baked or fried its just meh.
Dover Sole – unremarkable, probably why no one really knows about it...
Flounder – what's the difference in taste between a flounder and a cod?
Rainbow Trout – would be better if the taste was nuttier.
Catfish – slightly earthy, but ultimately falls flat (unless fried)

Garbage
Sardines – they're briny...goey...eurgh.
Anchovies – too salty
Eel – appalling texture
Carp – why did it taste muddy?
Pike – too bony for its own good.
