As an American Black Women married to my wonderful Gambian husband, I fell completely in love with the rich, bold, and aromatic flavors of the Senegambia region. However, traditional West African cooking can often rely heavily on large amount of cooking oil and high sodium ingredients, which can make it a challenge for anyone focusing on heart health, cholesterol, or blood pressure.
