Hi Jsnramc1.... yes it would still be great with pork, but I might suggest substituting peach preserves for the apricot (I think it pairs better with pork). This my favorite lamb recipe.

Saw the Apricot Lamb chops. Recipe looks quick and easy. Family won't eat Lamb. Have you ever tried this recipe with Pork chops? Interested to see how the apricot would be with the pork.
