I don't like to spray my molds with anything, it tends to make the soap slimy. Of course, if you are using a non-traditional soap mold that's being difficult, spraying with cooking spray is often your only choice.
Hot process soap is pretty difficult (if not impossible) to get this kind of detail with - so I probably wouldn't try the gingerbread man project with anything other than Melt & Pour.
