Hey, I hope everyone is having fun watching me cook. My joke is that I am the "World's Greatest Chef". I think that we all should be the "World's Greatest Chef" in our own kitchens. If you cook for your family almost everyday of the week, then you are their "World's Greatest Chef". If you were not, then they would not keep coming back for more. Lets all try and be the "World's Greatest Chef" for our families. Please let me know what you think. I love suggestions and I will try and cook almost anything. Let me know.

THanks,

DAve

Hi Dave! Thanks so much for your informative videos about cast iron cookware! I want to get rid of my other pots and pans and replace them with cast iron ones. I wished I would have learned how easy it was to season and clean cast iron. I had to grin when I heard you say that you had to use saturated fat to fill the pores of the metal, and on another video, the woman had warned from using saturated fat, cause she said it got ranzig quicker! LOL
I used coconut oil as my base oil, for the dutch oven I bought while we were in Boy Scouts, but never used, so 10 yrs later, I finally cleaned it and seasoned it. Its an 8 quart one, so I'll have to search the internet for recipes to use in my conventional oven.

Yes, you should wash it immediately after cooking a burger or anything other than frying. I sometimes leave the oil in the pan if i am going to reuse the oil for frying. Sure you can simmer broth in your cast iron. I cook everything except collards in my cast iron pans.
Thanks,
Dave

Hey Dave, I got my first two cast iron pieces today. I seasoned it like you instructed, but have a few questions. If I cook something like, say, burger in the seasoned pan, should I leave the grease in for seasoning or clean it? Also, if I was making something like jambalaya that requires a broth to simmer for like an hour, would it be okay to do in a cast iron, or would the water have an adverse effect to the cast iron?

Its great having a place to run to for recipes when I'm drawing a blank on what to cook. And the family loves your recipes, it always turns out great. Thank you so much!
