This is RNA Polymerase II, or Pol to those who want to be a bit less formal. Pol and his friends hang around inside every living thing, transcribing DNA into RNA, and thus creating the proteins that keep organisms alive.
And why should Monsieur Baguette care about Pol and his hard work? Because the yeast that keeps Monsieur Baguette's loaves so light and crusty, and makes the dough rise in the first place, is exactly the sort of organism that Pol makes possible.
