Essential Followers in Skyrim do not follow the normal rules of regular NPC's. When you pickpocket them, you are unable to see their starting "invisible" set of gear, even with the pickpocket perk Perfect Touch.

This video shows you a trick that will let you remove their default starting gear and equip them in anything you want. Cicero in a Chef's outfit? No problem. Mjoll wearing nothing but leather gloves? You got it. Your imagination is the limit, as shown near the end of this video.
