Chorchori, or charchari, is a popular vegetable dish in Bengal and Bangladesh. You'll probably never see it in a restaurant - it's very much a home made thing and you can use leftover or fresh vegetables. This dish is flavoured with panch phoron, the classic Bengali mix of 5 spices. The five spices used in Panch Phoran are nigella seeds (kalwanji), cumin seeds (jeera), black mustard seeds, fennel seeds and fenugreek (methi) seeds. The spices are mixed in equal quantities and are always used whole. And don't forget the asafoetida (hing) - this unpleasant smelling spice add a wonderful deep flavour to the dish.
This is definitely a keeper - my wife adores chorchori now!
