Pho - beef and noodle soup - is Vietnam's national dish. The Vietnamese eat pho for breakfast, lunch or dinner. Pho is served with a range of garnishes that add a lightness and vibrancy to the dish. The key to good pho is good broth, and this takes at least 4 hours to make. But the good news is if you make a lot, you can freeze the leftover broth and have pho any time you like, because assembling the finished dish is very quick and easy. And fabulously tasty.
