A nice summery lunchtime recipe consisting of cod fillets, seasoned with olive oil and a Knorr Fish Stock Cube and then pan-fried until delicately and served with sauce vierge. More of a vinaigrette, sauce vierge is a simple fresh tasting sauce made from extra virgin olive oil, tomatoes, basil, coriander, lemon juice.
Ingredients
4 cod fillets
1x Knorr Fish Stock Cube
4 tomatoes (skinned, de-seeded and chopped)
3 tbsp. basil
2 tbsp. chopped coriander
2 tbsp. chopped parsley
150ml olive oil
Juice of one lemon
75g black olives
