In this episode of Running The Kitchen I am making two types of delicious stuffed artichokes. The first is the traditional Italian Breadcrumb Stuffed Artichoke with garlic, olive oil, scallions, and Pecorino Romano cheese. The second type of artichokes are filled with a garlic walnut and olive oil mixture.

Artichokes are an excellent source of fiber, iron, and pack a bunch of antioxidants. They not only help to lower cholesterol but also aide in stabilizing blood sugar levels, making this a great snack for diabetics. The walnut artichokes are excellent for vegans and vegetarians because they pack protein and healthy fats without any dairy or eggs.

Both recipes make superb side dishes or meals that you and your friends and family will love!
