Greetings! Now that we are back into the swing, after all the holiday festivities, we find ourselves wanting something sweet. We have been good for at least a week and the Christmas goodies are all gone and we want some dessert.

We also have some bananas that are going south. Since I don't feel like getting out my dehydrator to deal with the bananas and Molly asked if we could make some banana bread, I thought it might be fun to throw together a banana cake (one of my favorites). This will use up some of those bananas and the rest can be mashed and go into the freezer for the next time I want to make a cake or a banana bread or even a smoothie!

This cake is super simple to make and you just make and serve it in the pan. A nice "snackin" cake is what I like to refer to this as. It reminds me of the "snackin" cakes that you used to be able to get when I was a kid. You don't have to feel like you have to frost this, just let it cool and dig it! It's delicious with or without frosting. But this time I am going to make a chocolate cream cheese frosting to put on top of this, because it will just make it wonderful and who doesn't love chocolate?
