Avocado Sandwich Makes 2 sandwiches
Ingredients:
1 ripe avocado
fresh lime juice
1 apple, peeled, cored, and cut into chunks, toss with lime juice.
6 cherry tomatoes, halved
1 radish, thinly sliced
goat cheese
4 slices of your favorite bread, I used whole wheat
baby romaine lettuce
olive oil
salt
Directions:
Cut avocado in half and then separate. Remove the seed and slice the avocado without going through the skin, length wise and then crosswise to make chunks.
Place the chunks into a bowl and add salt. Mash with a fork lightly to keep it slightly chunky.
Spread the avocado onto toasted bread in a generous amount. Layer on radish slices, apple chunks, tomato halves, and goat cheese.
Dress the romaine lettuce with olive oil and lime juice. Place several slices on top of your sandwich.
Serve with a side of healthy potato chips and enjoy!
