Makes about 1 dozen cupcakes

Cake Ingredients
1/2 cup (or 1 stick) butter, room temperature
1 cup sugar
2 eggs, room temperature
1 1/2 tsp vanilla extract
1 1/2 cups flour
1 3/4 tsp baking powder
1/2 cup milk

Cupcake tin
Cupcake liners (preferably parchment / clear)
Ice cream scoop (Rachel will bring)
Electric hand mixer
Two large bowls (one for cake, one for frosting)
One medium bowl
One small bowl (for red sanding sugar)
Rubber spatula
Piping bag (Rachel will bring)
Piping tip (Rachel will bring)
Small spoon
Butter knife
Pre-made yellow cake cupcakes in parchment liners - Betty Crocker works well

Cake Directions
Cream together butter and sugar until light and fluffy
Add in eggs, one at a time, beating after each addition. Mix in vanilla extract
Whisk together flour and baking powder.
Add dry ingredient to wet ingredients and mix. Mix in milk.
Scoop into cupcake liners and bake for 20-25 minutes at 350F. Let cool completely.
Pipe frosting onto cupcakes and use butter knife to spread slightly. Dip into red sprinkles. Decorate with pretzel stick + Jordan almond, then use small spoon to scoop out a “bite” of frosting. Add on two chocolate covered sunflower seeds for apple seeds.

Frosting Ingredients + Decoration
1 cup (2 sticks) butter, room temperature
3 cups powdered sugar
2-3 T cup milk
1 teaspoon vanilla extract
Red sanding sugar (Rachel will bring)
Chocolate covered sunflower seeds
Pretzel sticks
Jordan almonds (only need green ones)

Frosting Directions
Cream together butter and sugar. Add vanilla extract and enough milk to reach desired consistency.
