In the mood for Thai curry? This is a super easy and flavorful recipe that is quick to whip up for dinner!

1 medium yellow onion
3 cloves of garlic (minced)
2 large chicken breasts
2 jars of yellow Thai curry sauce
2 Tbsp vegetable oil
Baby carrots (optional)

1. Bring a pot of water to a rapid boil then add the chicken breasts. Allow chicken to cook thoroughly (mine took about 30 minutes).

2. Slice onion into thin slices. Dice garlic into tiny bits.

3. Shred fully cooked chicken in a bowl and set aside.

4. In a heated skilled (over medium-low heat), add vegetable oil, onions, and garlic. Sautee until translucent (stirring occasionally).

5. Combine shredded chicken with the onions and garlic, then add both jars of the Thai curry sauce. (Add carrots if you prefer!)

6. Allow the curry to simmer over low heat for 10 minutes. Serve over hot rice and enjoy!
