How can eating insects help us be more sustainable?
Professor Beth Choate's Advanced Insect Ecology class partnered with students at the American University of Bulgaria this semester through the Global Liberal Arts Alliance to explore methods of marketing the eating of insects. Learning the environmental and nutritional benefits of eating insects, of course, would not be complete without actually trying it out firsthand.
