YOu can find various kinds of kofta from North Africa to the Eastern Mediterranean, Middle East, Turkey and India. The word simply means 'minced'. It's usually minced lamb, but can also be beef or pork or a mixture. The spicing can also differ, as can the way it is presented (you find kofta as kebabs on a skewer, or meatballs or burgers), and also the way it is cooked - it can be grilled, fried, barbecued or baked. However you do it, it's usually delicious, but I especially like it as a burger.
