Try this tropical twist on a traditional seafood dish -- it's sweet, savory and sensational!
PINEAPPLE SALSA 2 tablespoons Crisco® Pure Olive Oil 1 cup chopped fresh pineapple 1/2 cup chopped red pepper 1/2 cup chopped red onion 1 tablespoon chopped garlic 1/2 cup chopped ripe tomatoes 2 tablespoons chopped cilantro Salt and pepper to taste Crisco® Original No-Stick Cooking Spray 2 pounds fresh salmon fillets Crisco® Pure Olive Oil Salt and pepper
1.COMBINE oil, pineapple, red pepper, red onion and garlic in large bowl. Stir to mix well. Add tomatoes and cilantro, stirring gently to mix. Season with salt and pepper. Let stand at least 1 hour before serving.
2.SPRAY grilling grate with no-stick cooking spray. Heat grill. Brush salmon with oil; season with salt and pepper to taste.
3.GRILL over medium heat 4 to 6 minutes per side or until browned and cooked through. Serve topped with Pineapple Salsa.
TIP Pineapple Salsa can be made a day ahead and stored in refrigerator.
