Victoria Sponge Cake first appeared in the mid-19th Century, and its height and lightness were made possible by the invention of baking powder. Queen Victoria liked to have a piece of this cake with her afternoon tea, and so it came to be known as Victoria sponge or Victoria sandwich. A Victoria sponge cake is quite a simple thing - two sponge cakes stacked on top of each other with a layer of buttercream and raspberry jam in the middle. The only decoration on a Victoria sponge is a light dusting of icing sugar on the top.
