Why is self-care so important … and why is it so hard?

In today’s episode of Beyond the Table (Episode #68) Cooks Who Care Founder Chef Maria Campbell sits down with Karen Nicolas to dive into the challenging topic of taking care of yourself while working in the food industry. Karen Nicolas is a former chef who, after finding herself faced with serious health problems, decided that her only option was to leave the business. She resigned from her job and embarked on a journey of discovering how to better care for her body and spirit.

Karen Nicolas eventually found her way back to her love of cooking, but these days she approaches it from a different perspective. Instead of returning to the food industry norm of pushing herself (and the people who work for her) to the extreme in order to make food for others, Karen now uses her cooking skills to help people. She has taught herself how to create dishes that taste delicious and also align with the elimination diets and ayurvedic healing principles that she follows to maintain her own health.
