Hand me down recipe from my sweet little Mother. First brown vidalia onion and bell peppers in olive oil & garlic then in same oil brown all sides of roast in same infused oil . Lay ribs of celery inside crock pot & place roast inside. Pour remaining oil over roast & add browned onions & peppers. Frenches mustard all on top & cook on low for 4 hours. Family loves this with most any side... & fresh green salad. Great sandwiches with left overs !
