Kathy Button wrote lyrics and sang for the opening of the 2014 Celiac Disease Foundation Conference. The song showcases several of the key sponsors and speaker of the conference. The lyrics are below.

It won't be easy, you'll think it's strange,
When I try to describe how I feel
Every time I eat gluten, even one tiny crumb.
You won't believe me.
You'll mock me and say it's all in my head,
Although I'm bent over with pain
And passing the worst smelling gas.

I had to get a blood test and biopsy,
Couldn't stay bloated like a balloon,
Spending hours in the bathroom, with no social life.
They said, "You have Celiac!"
So I went to the store to find gluten free food.
But nothing impressed me at all.
That's just the way it was then.

Don't cry for me gluten eaters,
The truth is I've found my new food.
Like Udi's sliced bread, Glutino pretzels,
Blue Diamond crackers, and Dole fruit squish'ems.

And as for experts, I found them too.
Doctor Fasano and his Italian accent,
I could listen to him talk about my guts all day long.
Doctor Zone knows skin,
For Dermatitis Herpetiformis, he's my "go to" guy.
Pam Cureton helps me balance my diet,
And she works with Doctor Fasano...aaaah.

There are mixes to make my life easy.
Good old Bob's Red Mill and Pamelas,
Yes, even Bisquick now comes in gluten free.

Don't cry for me gluten eaters,
There are restaurants with gluten free options;
Like Outback Steakhouse and PF Chang's;
Then there's Chipotle and Red Brick Pizza.

Have I said enough?
Have I begun to show you that gluten free is good?
This diet's changed my life;
I've no more painful bloating,
Or any floating poo!
