Grilled Chicken Thighs prepared over hard wood in my own back yard BBQ-Grill.
I recycled my old gas grill and used components for this grill design. The modified old grill cover works excellent to retain consistent heat in the grill.
About an hour before I start the fire, I marinate the chicken in a mixture of Lime jus and my favorite spice mix. Once the grill temperature reaches about 360° F I add the chicken. Since I don't like raw Chicken, I cook it for about 25 Minutes turning it 2-3 times making sure it does not burn. Chicken is done when internal temperature reaches 180° F.
The Chicken had an excellent flavor because of the marinade and the light smoke. (Sometimes I brush the Chicken with BBQ sauce about 5-10 Minutes before the cooking process is finished.)
