I was inspired to try this recipe because of this lady :)

1 envelope unflavored gelatin
2 cups whole milk, divided into two one cup portions
1 tablespoon sugar
1/8 teaspoon ground cinnamon (I didn't use this because I didn't want the specs of colour in the rainbow)
1 cup fat-free sweetened condensed milk
1/4 teaspoon vanilla extract (I didn't use this because I didn't want to add colour to the recipe)
1/8 teaspoon almond extract
1. Sprinkle gelatin over 1 cup milk in a saucepan; let stand 10 minutes. Cook over medium-low heat 5 minutes or until gelatin dissolves, stirring constantly with a whisk. Increase heat to medium, and add sugar cook, stirring constantly, until sugar dissolves, about 2 minutes. Remove from heat; gradually stir in remaining 1 cup whole milk, 1 cup sweetened condensed milk and almond extract.
Divide mixture equally into six bowls and tint the mixture in the bowls using food colour to get the colours of the rainbow.
Pour the first colour into the bottom of a suitable container and place in the refrigerator and chill until set. Gently pour the next colour over top of the first colour. Chill the two layers until top layer is set. Continue chilling and pouring each layer until rainbow is complete. Chill the whole thing thoroughly for at least an hour until completely set.
NOTE**** If the remaining colours begin to set while you are waiting for the other colours to chill, place them in the microwave and heat until liquid again. You could also leave the bowls sitting in some hot water in an electric frying pan on low. It doesn't take much heat to keep the mixture liquid until you are ready to use it. *********
