These burritos are a staple for me, so simple and delicious + packed full of protein (50g protein -roughly- as a whole, not per serving & not including wraps).
INGREDIENTS: 1 brown onion 1 minced garlic 4 tbsp tomato paste 2 tsp cumin powder 2 tsp chilli powder Pinch of himalayan salt Pinch of crack pepper 1 cup rinsed quinoa 1½ cup vegetable stock 1 cup diced capsicum 1 can (400g) black beans 1 whole avocado Pinch of himalayan salt Pinch of crack pepper 1 tsp lemon juice Bunch of lettuce Wraps of choice
