Risotto is one of classic dishes that everybody loves. It's just arborio rice, chestnut and porcini mushrooms cooked in white wine and a flavourful vegetable stock and finished off with Parmesan or Gran Padano cheese. Mushroom risotto is one vegetarian dish that even dedicated carnivores like me will enjoy. Italians will argue until the end of time about the correct way to make it, but I think this is a pretty convincing recipe for an Italian risotto.
