Caroline’s EveryDay Dish
Classic Mac ‘N’ Cheese

3 tbsp butter
2 tbsp flour
2 cups milk
_ tsp cayenne pepper
1 tsp sea salt
1 _ cup grated extra sharp cheddar
_ cup grated gruyere
_ cup grated pecorino
_ ball of mozzarella
2 cups macaroni elbows
1/3 cup panko bread crumbs

1) Preheat oven 390f / 200c
2) Before you start the White Sauce, pop a pan of water onto boil with a pinch of salt.
3) Grate your cheese, and set aside on cutting board.
4) Make your White Sauce:
-Heat a saucepan on a low heat, add the 2 tbsp butter and 2 tbsp flour and stir for about 1 minute on the heat.
-Pour the milk in a little at a time, alternating with adding the grated cheeses slowly, making sure it has all been mixed in before you add more. The secret here is to constantly stir, keep the heat low and add the milk slowly!
-Keep going until you have used up all the milk.
5) Add your macaroni to the salted boiling water carefully.
6) Leave to cook until al dente, as it will continue to cook once it goes in the oven.
7) Drain the macaroni once cooked, shake off excess water and add into the cheese sauce.
8) Pour macaroni and cheese into your baking dish.
9) Add some mozzarella pieces on top, then add the breadcrumbs.
10) Toast breadcrumbs in pan with 1tbsp butter until browned.
11) Sprinkle toasted breadcrumbs and any remaining cheese over the top of dish. I always add an extra sprinkle of cayenne pepper at this point too.
12) Cook in your 390f / 200c preheated oven for 25-30 minutes or until topping is browned.
