This town is Mexico's "cradle of independence," since Mexico's war of independence against Spain began here in 1810. For this reason it's a big tourist destination among Mexicans. Today Dolores Hidalgo is known for its beautiful ceramic tile--there are many tile factories in the area--and for its ice cream, which comes in every flavor imaginable...bacon ice cream, anyone?
