These vegan miso mushroom coconut noodles are my idea of heaven. I say creamy and delicious 100x in this recipe, because that's exactly what they are. They really take just ten minutes or so to make, and I think you'll love them too...

You'll need
- 2 portions of noodles
- 1/2 can of coconut milk
- 2 (really) heaped teaspoons of peanut butter (or almond butter)
- sesame oil
- 1 pack of mushrooms, about 250g
- a pinch of cayenne pepper
- 1 teaspoon of brown rice miso
- 1/2 lime
- a couple of spring onions
- 1 fresh chilli to serve
- sprinkling of sesame seeds to serve
- Salt and pepper
- Olive oil, to cook the mushrooms in
