Here is an easy way to keep wild leeks; pickle them! Pickled wild leeks are wonderful on their own, but they also make a great base for soups and dips. Also pickled leeks pickled with cider vinegar and honey makes a good cold remedy especially for head colds. Pickling brine recipe as follows: If you use store bought cider vinegar use 2 cups vinegar to 1 cup water and around 1 cup of honey. Pour over wild leeks, let set for at least a week, then enjoy.
