They say chicken is never too much! So, here is another easy but substantial meal. Chicken salad used to be a breakfast in many countries, but it can also be a part of a dinner.

Chicken Salad With Bacon


100 g. romaine lettuce
150 g. chicken breast
100 g. of bacon
8 quail eggs
8 cherry tomatoes
60g. of gherkins
100 g. homemade mayonnaise
30 g. parmesan
20 ml. olive oil
sat and pepper to taste


Fry well seasoned chicken breast on grilling pan. Cut bacon into medium strips and sear until golden brown. Cook quail eggs, chill, remove egg shells, cut into halves.
Cut cherry tomatoes, finely chop gherkins, then cut chicken breast into slices. Mix all vegetables, chicken and lettuce, add homemade mayonnaise. Serve with shaved parmesan.
