Mario Batali brings you Chef Anthony Sasso of Casa Mono demonstrating his technique for mincing a shallot!!
First, chop off each end, peel off several layers, and give it a flat side. Then, make tiny sliver cuts from top to bottom, but don't cut all the way through! Next, slice against the cuts that you just made. Lastly, make small cuts all the way through to mince the entire shallot!
