While Ennio Morricone pioneered the classic Italian Western sound, he had many brilliant friends and rival composers to compete with. Here's a great one from Riz Ortolani; he brings an almost or John Barry or hipster jazz verve into the "spagehtti" western sound.
His "Theme From Day of Anger" was heard in the House Of Blue Leaves duel in "KILL BILL, Vol. 1". In "KILL BILL, Vol. 2" , this piece of music is used when The Bride finally finds Bill. Neither piece was included on the soundtracks.
