King ranch chicken casserole is a Southern favorite. This recipe for king ranch chicken casserole is a bit gourmet, with natural creamed soups, gourmet salsa and fresh cilantro. This king ranch chicken recipe is every bit as easy as the Southern classic.
For this video recipe, you will need:
8-10 corn tortillas
2 10-12 oz. containers of cream of chicken and/or cream of mushroom soup
1 14 oz. can diced tomatoes with green chiles
1 cup salsa or pico de gallo - this is the shortcut that makes this recipe super easy and really tasty
1 tsp. chili powder
2-4 Tbsp. chopped fresh cilantro (optional)
3 cups shredded cooked chicken
3 cups shredded Mexican cheese blend
Start by preheating the oven to 350 degrees F.
Cut the tortillas into quarters.
In a large bowl, mix the creamed soups, the tomatoes with chilis the salsa, chili powder and cilantro. Give it a good stir until well combined.
Spread one-third of the chicken in the bottom of a 9 x 13 pan. Top with one-third of the creamed soup and salsa mixture. Smooth it with a spatula.
Top with half of the tortilla pieces. Sometimes people dip the tortillas in chicken broth to soften them, but we have enough sauce here to make them soft.
OK, top with another third of the chicken, then another third of the sauce mixture and half of the cheese. Put a second layer of tortillas on top of the cheese and then layer on the final layer of chicken and sauce. Smooth it with a spatula and sprinkle on the remaining cheese.
Cover the casserole with foil and bake 25 minutes. Uncover the casserole and bake another 10-15 minutes until bubbly. Let the king ranch casserole rest 5-10 minutes before serving.
