IMPORTANT UPDATE:
I made this video in early 2011. Since then, Apple has provided built-in support for Hulu Plus on the AppleTV 2g. That being said, there are still two advantages to this approach: First, there are some videos that are "web only" and cannot be viewed through Apple's built-in application. These videos can often be viewed through this method. Two, installing XMBC provides a number of other handy features that aren't available natively on the AppleTV. Therefore, it's still often worth the effort to get XBMC up and running. But if you're just looking for a simple way to watch Hulu on your AppleTV, check out the "Hulu Plus" button. :-)

Quick instructions:
1: Jailbreak AppleTV 2 (using Seas0nPass [Mac] or PwnageTool [PC])
2: Install PlayOn on PC
3: Install XBMC on AppleTV 2
4: Add PlayOn as video source
5: Enjoy!

UPDATE:
The latest versions of Seas0nPass (Mac -- http://support.firecore.com/entries/3... ) and GreenPois0n (PC -- http://greenpois0n.com/ ) allow for untethered jailbreaks of AppleTVs running iOS 4.2.1 (currently the latest firmware). Therefore, you do not need to have a computer and USB cable handy every time your power goes out or you unplug your ATV2. In short, this process is much easier now.
