I make this bread all of the time.  I call it DUMP bread, cuz you dump it in the hot pan.  I use my big cast iron fry pot, it really holds the heat and makes a great crust.  try leaving the lid off the last 5 minutes to let extra crustiness develop.  WOOP!  See ya.
Can you cover your pan with foil instead of using a lid?

i just made this in a lodge 2 quart cast iron oven in a small convection oven and i cant believe it worked.

She should have left it to cool for longer which is why when sliced it looked  a bit doughey- great technique baking it in a covered pot !

4:24 the bread is still on the counter were she put it to set. So leave it for two hours and another one appears haha
