This was our second year tapping our maple trees. We collected sap for a week, we ran out of buckets twice, and cooked it down for 48 hours. We eneded the season with just over two gallons of finished syrup. My wife thought it would be a good idea to use gallon freezer bags to collect the sap in. This has worked very well, and it keeps dirt and leaves out of the sap. We empty the bags 2 to 3 times a day. We boil the sap down outdoors and the last 1-2 hours we finish it off inside. I hope this video shows that you don't have to have a lot of trees to be worth the effort.
