For some reason, this delicious example of 'drunk food' hasn't spread much beyond its home town - Middlesboro in North East England. Chicken parmo (probably a corruption of parmesan or parmigiana) is a flattened, breaded chicken breast, generously slathered with bechamel sauce and cheese, finished off under the grill or broiler. It's easy to make, utterly delicious, and deserves to be better known.
