I had the good fortune to visit the Melvin and Ruth Woods farm on the day they were making Molasses same way it has been made in these Appalachian Mountains for several hundred years. It was exciting to see and hear the stories associated with this very old art and skill of making Molasses. Many interesting stories including the origin of the Cane Mill used at the Woods farm. Ruth told me they used to get their Molasses from the second son of Mr. Childress the well know Preacher and origin of the book " The Man That Moved The Mountain".( If you like Appalachian and Floyd County Virginia history I recommend reading this book) . When the Childress son could no longer make Molasses he gave the Cane Press to the Woods and they have been making Molasses every year they have had the press.

The woods also live on the Farm that has been part of Ruth Woods family for several generations. Her father Mr. Garfield Radford now 100 years old lives with the woods. He was out watching the molasses making operation when I was their and you can see him in the video. He is the smallest of all the fellows around the cooker. Molasses used to be the primary sweetener used in days of yore until refined white sugar pushed it to the back of the shelf. It has a distinctive flavor that brings extra sparkle to spice-laden recipes such as gingerbread, fruitcake, cookies, toffee, baked beans, and sauces.

Interestingly enough, molasses now costs about twice as much as refined sugar. Along with industrial alcohol and rum products, molasses can also be used to make yeast, cure tobacco, and in cattle feed.

Molasses has somewhat more nutritional value than does white or brown sugar. The process by which it is extracted and treated with sulfur results in fortification of iron, calcium and magnesium. Some natural health food experts still advocate its use for ailments of the stomach.
