This is absolutely delicious sausage gravy. I hope you like it too!

SAUSAGE GRAVY
1 12-16 ounce roll of pork sausage
3 tablespoon pork fat - rendered during cooking
3 tablespoons all purpose flour
3 cups whole milk
1/2 cup water
dash cayenne pepper flakes - optional
salt & fresh cracked black pepper to taste

Brown sausage in skillet. Remove any excess fat, leaving 3 tablespoons in skillet. Over medium-high heat, add flour to skillet. Stir constantly for about 2 minutes to cook flour. Add red pepper, onion powder, and stir. Add milk and water. Stir until mixture returns to a boil. If too thick, add more milk or water to desired consistency. Add salt and pepper to taste. Serve immediately. Store any leftovers in covered container in refrigerator. Enjoy.
