We had a delay in taping because of audio issues. So...I had a few too many libations waiting for things to be fixed. So basically the audio is sub par, and I'm drunk. Man, did I have FUN, though!

Meat Loaf on steroids! What is better than 4 pounds of perfectly seasoned ground meats wrapped in a BLANKET O' BACON? NOTHING!

1# bacon, woven

1# ground beef 85/90 % lean
1# ground pork
3/4 # ground venison
3/4 # ground veal

A good squirt of a stout beer bbq sauce. (You can mix your own beer/bbq sauce.)
1 cup cheese. (I use 3/4 c monetary jack, 1/4c Danish blue)
6-8 oz crispy pancetta.

Brown sugar
Spice rub

Weave bacon on wax paper or foil.
Sprinkle with spice rub of your choice.

Press meat mixture out on the "Blanket O' Bacon". Be gentle when mixing your meat.

Sprinkle with rub, squirt on bbq sauce, top with cheese and pancetta.

Lift the edge of this bad boy and start rolling like Snoop Dog.

Cook in a 200 to 220 degree oven until the internal temp reaches 195 degrees.

Any meatloaf mixture will work...get creative! A more heart healthy approach is to use buffalo, ground chicken, or turkey.

You can also par cook the bacon and roll with scambled eggs and cheese for a my-day-ended-at-breakfast-because-of-the-food-coma, breakfast.
