Soup. Always good. This soup was made using
the leftovers from a recent meal of cornish hens.
Even the stock was made from the leftovers.
20 minutes of prep time and let it sit in the crock
pot for 6-8 hours on low.(never believe them when
you're told 10 minutes of prep time. They must have somebody
helping and who does the cleanup?)
1/2 onion, chopped and 1 large garlic clove minced. Saute in 1 Tablespoon of Coconut Oil.
2 cups carrots
2 cups celery
3 cups cooked chicken
3 cups chicken stock(more if you add lots of noodles)
2 cups water
1 teaspoon oregano
1 teaspoon basil
1 teaspoon thyme
1 Tablespoon parsley
Salt and pepper to taste
Cook on low for 6-8 hours.
Add noodles and cooked chicken 1 hour before serving.
