Sue Mallick with Food City presents a fresh recipe for mixed vegetable stir fry at Food City's Cooking School. 6 oz dried rice sticks; 2 pkgs stir fry veggies; 2 stalks bok choy; 1 tbsp vegetable oil; 2 tsp toasted sesame oil; 2 tsp minced garlic; 1 tbsp grated gingerroot; 3 tbsp tahini paste; 3 tbsp soy sauce; 1/2 tsp crushed red pepper; 2 green onions; 2 tbsp chopped unsalted peanuts

Soak the rice sticks in enough warm water to cover for 10 to 15 minutes or until softened, drain and set aside. Heat vegetable and sesame oils in a large skillet over medium high heat. Add stir fry veggies, bok choy, garlic, and gingerroot and stir fry for 2 minutes or until vegetables are crisp tender. Add tahini paste, soy sauce and red pepper and toss ingredients to coat. Spoon vegetable mix over rice sticks and sprinkle with green onions and peanuts.
