Ingredients:
Eggplants, mozzarella cheese or smoked mozzarella cheese, basil, parmisan, oil for frying, salt, tomato sauce.
This is a typical Italian, Neapolitan recipe and the ingredients are the same that are used for "parmigiana", but here, instead of making layers (as in the parmigiana), we make rolls.
Peel and cut eggplants in thin slices; fry them in a pan with oil for frying, or you can also roast them for a lighter type of this recipe. Cook a simple tomato sauce (fry a minced onion and when it is blond add minced tomato and salt and cook for 20 minutes. Be carefull adding salt, because there is parmisan in the rolls).
Then make the rolls as in the video and put in the oven for about 18 minutes at 200/220°
